How to choose grapes
1. Ripe grapes with high sweetness
There are many varieties of grapes on the market. We don't choose varieties for making wine. We just choose ripe grapes, which can speed up fermentation and have higher sweetness p>
2. Individual flavor grapes
There are many Jufeng grapes sold around us. They are large, thin skinned, with plenty of meat and sufficient water. They are the first choice for most people to make wine p>
There are also some fragrant grapes, such as rose fragrance: with rose fragrance, relatively small, slightly thick skin, bright color after brewing, it is also very popular p>
Of course, if your home is close to the vineyard, you can also choose Cabernet Sauvignon and Merlot grapes for professional red wine production, which have stronger fruit flavor~
Wine making steps
1. Choose the grapes
One kilogram of grapes can produce 6-8 liang of wine. Friends who do it for the first time can buy 5-10 kilos to practice their hands. Before buying, you should taste the sweetness. You must buy grapes with high sweetness and no astringency p>
2. Grape washing with salt water
Soak grapes in salt water (concentration 3%) for 10-15 minutes. The main purpose is disinfection and sterilization. The white film on the surface of grapes does not need to be rubbed off, and the fermentation with white film is faster and better. After soaking in salt water, wash it with water for 1-2 times, and remove the bad grapes at the same time p>
3. Remove the grapes and dry them
Clusters of grapes are not easy to dry, so you should remove them first. Friends, don't be lazy ~ cut them off with scissors or knives. Don't pick them directly, which is easy to form openings and breed bacteria p>
After picking, put it on the sieve to dry. Be sure to dry it completely without raw water p>
There is enough space at home to lay flat and dry. Don't dry in strong light. Keep moisture p>
4. Add sugar and crush grapes
Huahua has ten kilograms of grapes. We are going to add three kilograms of white sugar (medium sweet taste) and add it three times when kneading. In this way, the grapes are easier to juice. Just knead and wash them with your bare hands. Friends who love cleanliness can wear disposable gloves
It's better to ask your family to knead together. There are many people and great strength. Huahua's experience p>
5. Knead and pour into a large container
The containers here are specially bought glass cans, which have been disinfected by hot water. The containers we use when making wine must be disinfected. Don't be too full when loading. Leave some space for fermentation p>
6. Isostatic fermentation
Put it in a sealed container and put it in a cool place at home. Don't be exposed to the sun, and don't be curious to open the cover. Because we have added sugar in the process of kneading, we don't need to stir in the back. The whole fermentation process takes about 20 days p>
About a week or so, the wine begins to separate water and meat, which is a good start. It will be completed in another two weeks p>
7. Filter
The longer the wine is brewed, the stronger the wine taste. Huahua doesn't like too strong wine, so the cover is opened to filter the residue in 22 days and filtered with two layers of filter screen and gauze~
If you can't fit the rest, put it into the drink bottle you save at ordinary times and you can drink it at any time~
8. Preserve
There is no chemical addition to homemade wine, so we must do a good job in preservation. Usually, if you want to drink, you should pack more small bottles. If you want to keep it until the new year, you'd better keep it alone. Don't open it and put it in a cool and ventilated place at home~
